Gluten-Free Lemon Sugar Cookies

You know what I love? Citrus. You know what I also love? Sugar cookies. These cookies are very much a homemade version of those Wow Baking Lemon cookies, which means they’re soft, lightly coated in sugar, and full of fresh lemon flavour.

Ingredients:

170g softened butter
99g brown sugar
52g white sugar + extra for coating
1 egg
1 whole lemon zest
1 tbsp lemon juice
1 tsp vanilla extract
270g gluten-free flour
3/4 tsp baking soda
1/2 tsp salt

Directions:

Cream together the butter and sugars, then add in the egg, vanilla, lemon juice and zest. Mix together until fluffy.

Whisk together the flour, baking soda and salt, and then add the wet ingredient mixture into the dry and blend throughly. Place the mix in the fridge for at least an hour or overnight, so the dough is chilled through.

Preheat oven to 350ºF. Make tablespoon-sized balls (like the size of a truffle!) and then roll the ball in the granulated sugar to cover. Cook for 8 to 10 minutes, or until the edges start to brown.

Makes 32 cookies.
